No Bake Cookies Recipe
What could be easier than cookies that don't even require an oven?
This no-bake recipe are perfect during the summer when the last thing you want to do is turn on the oven and heat up the kitchen.
Part cookie, part candy, no bake chocolate oatmeal cookies are sure to please.
- 1/2 cup (1 stick) butter
- 1/2 cup milk
- 2 cups sugar
- 1/4 cup unsweetened cocoa (4 tbsp) or 2 oz semisweet chocolate chips
- 1/2 cup peanut butter
- 2 tsp. vanilla extract
- 3 cups quick oats
In a saucepan over medium-high heat, melt butter. Then add milk, sugar, and cocoa and stir to combine while bringing to a boil. Boil for 1-2 minutes, then remove pan from heat. Stir in vanilla and peanut butter, until melted. Stir in oats.
Drop by spoonfuls onto waxed paper, and let cool until hardened or Refrigerate for 1 hour, until firm.
Tips:
Once you stir in the oats, the cookies go from gooey to set up pretty quickly. So I’d recommend prepping your wax paper beforehand (or while your butter is melting!). Or even more easier, take a 9”x13” baking pan spray it with cooking spray, pour the mixture into the pan. Now let it cool or refrigerate and then cut it into squares.
Customize your no bake chocolate oatmeal cookies in a variety of ways...
- Stir in 1/2 cup shredded coconut with the oats.
- Add a dash of cinnamon to the cocoa, sugar, milk, butter mixture.
- Use crunchy peanut butter instead of smooth for added crunch.
- Add 1/2 cup chopped nuts with the oats.
- Add 1/2 cup dried cranberries or raisins with the oats.
